Where did this Keto Creamy Mustard Sauce come from?

Believe it or not, I was fortunate enough to be given this recipe by a patient of mine who actually graduated from Le Cordon Bleu culinary school in France!

For those of you who don’t know, Le Cordon Bleu is a world-renowned network of educational institutions dedicated to providing the highest level of culinary and hospitality instruction through world-class programs.

Le Cordon Bleu is considered to be the guardian of French culinary technique through its culinary programs that continue to preserve and pass on the mastery and appreciation of the culinary arts that have been the cornerstone of French gastronomy for over 500 years.

By tweaking the recipe just a bit, I was able to create a low-carb and keto-friendly version of the original!

What ingredients do you need to make this Keto Creamy Mustard Sauce?

Heavy cream – You can use either Heavy cream or Heavy whipping cream which has a little higher fat content. You can not replace this with regular milk or any other dairy-free alternative milk as the sauce will be too thin. Although I have yet to try it, I believe that full-fat canned coconut milk should work.

Mustard powder – My original recipe called for 4 whole tablespoons of mustard powder but since then, I have decreased the mustard powder to 3 tablespoons. Although I like the peppery/spiciness of mustard, Mr. Grumbles prefers a more “toned-down” version. However, when you make this sauce, you can always taste it at the end and whisk in additional mustard powder to suit your taste.

Butter I used unsalted butter in this recipe but you could always use salted butter if it is all you have.

Vinegar This recipe calls for white vinegar but you can always use Apple Cider Vinegar if you prefer. Although the two different kinds of vinegar taste fairly similar, you will be able to taste the difference so pick whichever one your family likes best.

Eggs this easy keto sauce recipe calls for 2 large eggs. Make sure you whisk your eggs before incorporating them into the heavy cream.

Sweetener I have made this recipe with Allulose and Lakanto Golden as well as Lakanto Classic so feel free to use anything.

Salt – Salt helps to round out the flavours.

Optional Spices – You can add some garlic powder, onion powder, smoked paprika, nutritional yeast or any other spice.

Sweetener choices for this Keto Creamy did I use to Mustard Sauce

For Keto Creamy Mustard Sauce, I used Allulose but I am sure that Bocha Sweet would work as well.  Allulose and Bocha Sweet are the closest “relatives” to real sugar.

However, they are only about 70 % as sweet as most of the other sugar substitutes on the market so if you decided to use a different type of sweetener or if you use regular sugar, you will need to increase the amount of sweetener.

Since I love the flavour of maple and mustard, you can always add some Lakanto Sugar-Free Maple Syrup to add some additional sweetness to the sauce.

If you want to try a different type of sweetener, feel free to PLEASE check out my Guide to Keto Sweeteners before you swap the allulose for something else.

How long will it take for the sauce to thicken?

This depends on the size of the saucepan you use.

A smaller saucepan has less surface area and therefore will take about 5-7 minutes.  A larger saucepan with more surface area will take about 3-5 minutes.

Do not use a saucepan that is too large as the cream in the sauce can burn so you want at least 1 inch of sauce at the bottom of the pan.

After removing the sauce from the heat, it will continue to thicken so only allow the sauce to get to the consistency where it will cover the back of a spoon.

I personally like this sauce on the thinner side as I love to “drizzle” it on all my roasted veggies and meats so I only whisk it for 5 minutes.

How can you use this Keto Creamy Mustard Sauce?

There is no lack of ideas when it comes to how to use this savoury sauce.

It is flavoursome enough to pair with cuts of beef like my Easy Pressure Cooker Garlic Roast Beef, or my Slow Cooker Beef Brisket.   But this delicious creamy mustard is also always the perfect dipping sauce for my Whole30 Air Fried Chicken.

It’s also a perfect dipping sauce for my Air Fryer Fish Bites and my Crispy Slow Cooker Pulled Pork or simply just drizzle over veggies like my Caramelized Oven Roasted Carrots (Whole30).

How do you store this Keto Creamy Mustard Sauce?

This creamy mustard sauce can be stored in the fridge for up to 7 days in an airtight container.

Can you make this Keto Creamy Mustard Sauce ahead of time?

Absolutely!

You can make this sauce up to 5 days before serving.  Simply allow the sauce to come to room temperature before serving.
